What is Quark?
Germany’s best-kept dairy secret.
Walk into almost any supermarket in Germany and you will find quark in the dairy section. Plain quark, creamy quark, low-fat quark, herb quark, and fruit quark are part of everyday life.
In Canada, however, many people have never heard of it.
One of the questions we hear most often is: “What exactly is quark?”
Quark is a fresh cultured dairy product. It sits somewhere between yogurt, cream cheese, and cottage cheese, but it has its own unique texture and flavour.
It is smooth, creamy, fresh, slightly tangy, and naturally high in protein. Unlike cream cheese, it is not heavy. Unlike yogurt, it is not runny.
For centuries, German families have used quark in cheesecakes, pastries, fruit desserts, breakfast bowls, dips, and traditional baking.
Many classic German recipes simply would not taste the same without authentic quark.
When we moved to Canada, we quickly discovered that authentic quark was difficult to find. Instead of changing our recipes, we decided to make our own using traditional German methods.
Today, we are proud to introduce one of Germany’s favourite dairy products to Vancouver Island.

What is quark in Canada?
In Canada, quark is still relatively uncommon. It is a fresh cultured dairy product that is lighter than cream cheese, thicker than yogurt, and widely used in German baking.
Is quark a yogurt or cheese?
Quark is closer to a fresh cheese than a yogurt. It is made by culturing milk and draining away some of the whey, creating a smooth, mild, and creamy dairy product.
Is quark good for you?
Quark can be a nutritious food because it is naturally high in protein and often lower in fat than cream cheese. Like any food, it depends on the recipe, portion size, and how it is served.
What is a substitute for quark?
The closest substitutes are Greek yogurt, strained yogurt, cottage cheese blended smooth, or a mix of cream cheese and yogurt. None of them taste exactly like traditional German quark.
What does quark taste like?
Quark tastes fresh, mild, creamy, and slightly tangy. It is less sharp than yogurt and lighter than cream cheese.
Can you use quark for cheesecake?
Yes. Quark is the traditional base for many German cheesecakes. It gives the cake a lighter texture and a fresh flavour compared to cream-cheese-style cheesecakes.
