Each bun starts as a 100 g piece of dough before baking, giving it that generous, satisfying size you’ll notice right away. Baked using traditional pretzel methods, it’s pillowy soft inside with that unmistakable pretzel flavour — but without the salt on top. Smooth, mild, and endlessly versatile.

As participants in the City of Victoria’s Launch Victoria program, we’re working towards a permanent home for BRETZEL, aiming to open between April and June 2027.

We make our traditional German baking from scratch, in small batches. Many of our breads develop their flavour and texture through long fermentation, while our pastries and cakes require their own careful preparation. These processes take time and cannot simply be rushed. 🥨
